今月は
葡萄のコンポジション～ラムレーズンのアイス添え～
となっております

糠漬けにした巨峰や、赤ぶどうとワインのジュ、ラズベリーと葡萄のムース、ラムレーズン、フレッシュな葡萄等、色んな形の葡萄でコンポジション(構成、組立)したデセールです

少し、ほうじ茶の風味も取り入れております
⁡
こちらには合わせてイタリアのピノネロをおすすめしております。
程よいタンニンと芳醇な果実味と香りがデセールに深みをもたらせてくれます

This month’s offering is
“Grape Composition—Served with Rum-Raisin Ice Cream.”

This dessert is a composition featuring grapes in various forms, including Kyoho grapes pickled in rice bran, a red grape and wine jus, a raspberry and grape mousse, rum-soaked raisins, and fresh grapes.

We’ve also incorporated a subtle hint of hojicha flavor.
⁡
We recommend pairing this dessert with an Italian Pinot Nero.
Its moderate tannins and rich fruitiness and aroma add depth to the dessert.
